I'm finally back home in Indiana and excited to start baking again!
I've been doing lots of research on chocolate buttercream recipes and decided to try one out. It was delicious! I tweaked the recipe a bit and I really liked it! It was nice and fluffy and not too overpowering, which is important for me when eating anything chocolate. I love chocolate but sometimes I find chocolate desserts can be too rich for my tastebuds and stop enjoying it after a few bites. That was definitely not the case with this cake!
I did a simple chocolate cake but in-between the layers I have chocolate ganache made with milk chocolate with homemade whipped cream on top and then another layer of cake. The homemade whipped cream really helps to break up the chocolate and keep it fluffy. Then I did the chocolate buttercream on the outside of the cake, which was the perfect amount of chocolate for me. I used melted and cooled milk chocolate for that as well and it turned out pretty yummy! I would love to add a raspberry compote layer in there to make it a little more fresh tasting. Don't you think fruit just adds something fresh to your cakes? YUM!
